Baramili cheese is a cow or buffalo milk white cheese that originated in Damietta. The cheese is salted to add longevity and aged in barrels (baramil). As the saltiness of the cheese can be quite intense, Egyptians tend to combine it with tomatoes and olive oil to make a popular cheese dip known as gibna beida bil tamatem. Here we substitute the traditional tomatoes with crunchy Egyptian green peppers for a more unusual dip.
