Okra is a popular, wholesome vegetable in Egyptian cooking, often appearing in tomato-based stews alongside rice. This okra in brodo is a no-tomato edition and the perfect side dish to the Stuffed Damietta Duck. Cooked in silky, dense duck broth, it packs loads of extravagant flavour.
