Buried Grouper in Saffron Jewelled Rice

Popular in Port Said and Damietta, this glorious grouper dish is at the centre of a culinary feud between families from both cities, each claiming it as their own. Named after Lebanon’s capital city Beirut - the region’s producer of premium nuts - the speciality dish is reserved for sumptuous feasting with its generous use of saffron and mixed nuts (khalta). Damietta, being the older of the two cities, believes this dish is without a doubt part of their culinary heritage, whilst Port
