Sardines are a delightful addition to the Mediterranean diet: rich in flavour, nutritious and easy to cook. Sold fresh at the fish market in Port Said, they are quickly roasted in the market’s ovens, then seasoned with olive oil, salt and cumin.

Ingredients

  • 12 sardines, cleaned
  • 4 tbsp olive oil
  • 1 tsp coarse sal

Method

Preheat the oven to 200°C (400°F, Gas 6).

Place the sardines on a baking tray and cover with olive oil. Sprinkle the salt and cumin evenly over the fish, then place the tray in the preheated oven for 20 minutes. Turn the fish over and continue to cook for another 15 minutes or
