During a visit to Port Said’s fish market, we discovered the delights of sehleya, or keeled mullet, a small but tasty member of the mullet family, comparable in size to plump sardines. After inquiring about the freshest catch, the fishmonger, fondly known as Sheikh Al Sayadeen, recommended this local delicacy. Accompanied by pickles, tahina and rice, this was the stand-out fish dish of the day. The ovens in the market resemble pizza ovens, so blast your home oven to high tempe
