This sublime soup evokes the flavours of the sea and features the white fish dorade. The fish can be simmered whole or cut into pieces, allowing for a more personalized dining experience as each person flakes the tender flesh off the bone.

Typically sole, dorade (bream) or seabass are used for this soup, but any white, fleshy fish will work.
