One dish connecting these regions is shakshuka, a favourite in North Africa, where its origins lie. This version uses Marsa Matruh’s exquisite mint and pairs it with feta cheese, while harissa adds a Berber touch.

The green harissa recipe yields more than needed for one pan of shakshuka; the rest can be stored in a jar, topped with a
