The desert truffles of Egypt’s North Coast are shrouded in intrigue. They grow wild underground without roots, stems or flowers, and the fact that no one has been able to cultivate them has added to their mystery. Terfas, the truffle-like fungi, grows under the deserts of North Africa, from Morrocco to Egypt, as well as the Arabian Peninsula. Truffles pop up after the rains in October and November - but the amount of rain needs to be just right and followed by a dry period for desert
