Dorade is a member of the bream family and known as denise in Egypt. Its mild-flavoured white flesh and versatility in cooking methods makes it a favourite on the North Coast. Both grilling and baking in the oven work perfectly for this recipe. Dorade, with its subtle taste, serves as an excellent base for all kinds of seasonings, but we chose a Bedouin-style fish spice rub or bzar.
