In the deserts around Marsa Matruh, goat and sheep roam freely with their shepherds, browsing on fresh shrubs and breathing sea air. For special occasions, an entire kid goat is covered in spices, wrapped tightly and slow roasted on hot coals under the desert sands until it melts. We recreated this for the modern kitchen using a kid goat leg. For the Bedouin spice rub known as bzar, we made our own mix using all the ingredients the spice maker showed us in the market in downtown Marsa Matru
