Bedouins serve fragrant basmati rice alongside their slow-roasted meats, a practice that sets them apart from much of Egypt, where short grain rice remains the norm. This choice speaks to their ancestral ties to the Arabian Peninsula, where long grain rice is used. The rice, tinted with turmeric and topped with a nut-raisin mix known as khalta, pairs beautifully with the bzar-spiced goat leg.
