This tender farmers’ flatbread is Fayoum’s version of aish baladi, or “local bread”, Egypt’s wholesome everyday staple. Fayoumi bread is larger, lighter and fluffier than other varieties in Egypt. Its distinctly soft crumb owes a lot to the wet dough used to make it, giving it a supple and airy texture. Local women baking bread in mud brick ovens is a common sight in many of the restaurants and hotels around town.
