Cape gooseberries, physalis or harankash, as we call them in Egypt, are sold on street carts during the late summer and autumn months. For this recipe we paired the popular yet humble creamy rice pudding, roz bil laban, with a compote made of spiced harankash for a fresh take on the original.

To make the rice pudding, stir together the rice, sugar and 200ml (7fl oz/¾ cup) water in a heavy-bottomed pan over a medium heat. Let it come up to a boil, then cook for 5-10 minutes. Add the milk, cream and vanilla bean and once it returns to a boil, reduce the heat to low and let simmer, stirring occasionally, for 45-50 minutes until the rice is tender.
