Bell peppers, with their hollow centres and thick, bright, coloured walls, seem to be destined for stuffing. No wonder Ottoman, Mediterranean, Levantine and Balkan cultures all created their own versions of this dish. The beauty of mahshi filfil lies not only in its harmonious flavours - the peppers’ subtle sweetness blends beautifully with the spiced rice and meat - but in its visual appeal. Colourful pepper parcels lining a platter are eye candy on any dinner table.
