Purslane is a succulent plant that grows all over the Egyptian countryside - its leaves and stems are fleshy, retaining moisture. In salads, this unique trait adds to its shelf life - the leaves don’t wilt quickly, keeping the dish fresher for longer.
Egyptians often eat purslane as a stew, but here we opted for a no-cook approach, using the leaves as the star ingredient of a farmer’s salad, tossed with a creamy, tangy dressing.
