Aluminium pots of different sizes simmer gently on the stove, coaxing cabbage leaves to tenderize, and herby rice to soften. Stuffed vegetables are de rigeur in traditional Egyptian homes, with the cabbage variety at the top of the league. Stuffed cabbage takes time and patience to prepare, but the result is a visual and gastronomic feast.
The translucent, finger-sized parcels freeze beautifully too, in their original pot, ready to be taken out whenever the house craves them
