Fayesh, meaning “fluffy”, gets its name from the frothy fermented milk yeast used in its preparation. This bread is traditionally baked by women in rural areas along the Nile in Upper Egypt. The process involves fermenting lentils or chickpeas (garbanzo beans) with milk for a few days to produce a natural milk yeast called khamiret al laban.
