Shelaolao is a cold and refreshing vegan soup made from dried, fine powdered molokheya (jute mallow) leaves. Widely eaten by Coptic Christians in Upper Egypt during the fast of St Mary from the 7th to the 22nd August each year, this dish holds great cultural significance - it is believed to have been enjoyed by the Holy family during their refuge in Egypt. The garlicky, spicy and tangy soup requires no cooking; a perfect way to honour the fast during hot summer days.
