Khobeiza is the mild, tender leafy green, shaped like geranium leaves, that grows freely in fields alongside other crops by the Nile. Native to the Nile Valley and throughout the Levant, it is traditionally cooked in stews with herbs and garlic. In this recipe, we make khobeiza (mallow) with plenty of fresh coriander and add whole chickpeas (garbanzo beans) for a contrast in textures. If khobeiza is unavailable, spinach makes a perfect substitute.
