Asaleya, Egypt’s old-fashioned, pulled molasses candy, originates in Upper Egypt, where most of the country’s sugarcane grows. Sugarcane juice is boiled down into a thick dark syrup known as asal aswad (black honey), a nutritious molasses typically used as an alternative sweetener in Egyptian kitchens for centuries.
