In this part of the country, molokheya, or jute mallow shares the same silt as sugarcane, giving it an uncommon sweetness that seeps through to its finished flavour. We combine our Luxor molokheya with beef shanks producing a rich broth, and a dish that reflects its terroir. Frozen molokheya can be found in Middle Eastern grocers around the world.
