Ads abu gibba or “lentils in robes” is a playful reference to lentils cooked with their skins left on. This popular dish is reminiscent of ful medammes (fava beans) - a rustic comfort food. To bring out their full flavour, the lentils are finished with the traditional tasha, then topped with crumbled feta, fresh coriander and a good swig of olive oil. Scoop up the lentils with warm flat bread.
