Konafa is the undisputed highlight of Ramadan desserts in this area. Traditionally filled with cream, ricotta cheese or nuts, and soaked in sweet syrup, a hair-thin dough gives it a signature delicate crispiness and texture. While wandering through the back streets of Esna, we came across an old machine crafting these wispy strands of dough out of a loose, pale batter, instantly evoking memories of festive Ramadan nights.
