In the Nubian Kenzi dialect, imbodnisi literally means “salt and water”. The name reflects a playful “anything goes” spirit, inviting us to toss whatever we have at hand into a salad. The salad combines vegetables, greens, herbs and torn pieces of bread coated with a zesty spicy dressing.

Ingredients

  • 2 tomatoes, diced
  • 2 cucumbers, deseeded and diced
  • 2 spring onions (scallions), sliced

Method

Place the tomatoes, cucumbers, spring onions (scallions), onions, rocket (arugula), herbs and chilli pepper in a bowl. Tear the flatbread into bite-sized pieces and mix in with the salad.

In a small bowl, whisk together the lemon juice, olive oil, coriander, cumin and chilli powder, if using, and season with salt and pepper. Toss the salad with the dressing and serve.
