Karkade is a ruby-red drink made from dried hibiscus flowers that thrive in Aswan’s warm and dry climate. This sweetened, tart drink is valued not only for its taste but also for its medicinal gifts; it is known to lower blood pressure. On arrival to any Aswan home, karkade is served as a welcome drink.

Ingredients

  • 25 g (1 oz) dried hibiscus flowers
  • 1 l (35

Method

Put the dried hibiscus flowers in a bowl, pour the boiling water over them and let steep for 20 minutes.

Strain the liquid to remove the petals. Add sugar, to taste. Refrigerate and serve cold, or serve hot as a tea.
