Farasheeh bread is a daily staple in every St Catherine home, made by women who pass the tradition down through their daughters. This thin and chewy flatbread, made from flour, salt and water, is baked on a domed iron plate called saj over an open flame. A cornerstone of Bedouin life and hospitality, the women of Katriin (as St Catherine is called) typically bring it out folded in warm mounds with dukka, olives, white cheese and tea.
