Khoshaf comes from the similar sounding name in Persian that means “delightful water”. The orchards of St Catherine and Mount Sinai produce divine fruits that go beautifully into this compote. The longer the fruits sit in the water, the thicker the syrup gets. Typically eaten during Ramadan all over Egypt, khoshaf would make for a sublime breakfast or fruity treat any time of day.
