Butter Chicken Rice Bake

This dish is known as Biram Zou Zou in Cairo high society and named after its creator, Zeinab Abdulla Hanem - a formidable and elegant matriarch from Cairo’s upscale Garden City district. Her biram is a modern take on the classic roz muammar of her Nile Delta hometown Kafr el Sheikh, where rice and birds are cooked in clay pots with plenty of dairy.
