I like to start the day off healthy with muffins like these. I much prefer spelt flour to whole-wheat flour when baking, as it can be substituted cup-for-cup for regular all-purpose flour. You can feel good about all of the ingredients in these muffins. In the fall, try using mashed pumpkin instead of banana for a different spin.
