When it comes to grilling, greens usually aren’t a big part of most people’s repertoires. But I’m telling you, they’re great for grilling. Try a grilled romaine Caesar salad, for example, or this grilled escarole with citrus. The escarole holds up really well on the grill, and the smoky flavor is a nice complement to the oranges. This salad is hearty enough to be served on its own for lunch, or add a piece of grilled salmon for dinner.
