A plate of grilled vegetables can be a kind of boring side dish, but if you chop ’em up and turn them into a salad, they sing. With the black beans, this salad is not only an excellent side dish, it’s also a great main dish to serve if you have vegetarian friends joining. I also like this salad with a sprinkling of grated ricotta salata or crumbled feta cheese.
