When I was a kid, my dad used to make sausage burgers all the time on the grill. He used breakfast sausage, so I thought why not do Italian sausage with the onions-and-peppers bit? The pickled banana peppers are the star addition to this burger—the acid cuts right through the fat of the sausage and gives it a nice little zing.
Heat the oil in a large skillet over medium heat. Add the onion, pepper, and garlic and sauté until the onion is translucent and the pepper is tender, 8 to 10 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
