Black beans and peaches are an unlikely combo, I know, but I promise they are a match made in heaven. My mom used to make quesadillas with black beans, peaches, and cheese; I think she got the idea from a magazine, and we thought it sounded so strange we had to try it. They were a hit, and so are these little bite-size scoops.

Ingredients

  • 1 cup (170 g) canned black beans, drained and rinsed

Method

Combine the beans, peaches, onion, cilantro, and garlic in a medium bowl. Season with salt and pepper to taste. Spoon the mixture into tortilla scoops and serve immediately.
