Ask a Southerner about pimento cheese and the usual response will go something like this: “Ooohhh”—eyes roll back in head—“I looooove pimento cheese.” Typically, it’s made with just cheddar cheese, pimentos, mayo, and maybe a little pickle relish, sometimes a touch of cream cheese (or, in my grandpa’s recipe, a little Velveeta).
