Tell me: What is better than fresh corn in the summer? I cook it every which way I can, and these corn fritters are a star recipe. I serve them at cocktail hour with a simple dollop of sour cream and scallions, but the sky is the limit. You could top them with caviar, with tomatoes and basil, or serve them for breakfast with maple syrup, or even as dessert with fruit and whipped cream.
