OK, so, confession time. In the winter, I eat chicken Parmesan weekly, sometimes more often. Next to pizza, it’s probably my favorite food. It can be kind of fattening, though. I mean, it is breaded, fried, and covered in melted cheese. It’s not exactly warm-weather food, but I crave those flavors in the summer too. So I started making it on the grill. It’s much lighter this way, the perfect summer fare: grilled chicken, a little tomato sauce, and fresh mozzarella.
