If the idea of grilling fish intimidates you, try this recipe. Kebabs are a much less intimidating way to wade into the waters of seafood grilling, and swordfish is hearty and holds up on a metal grate. You’ll notice that the fish is cut into slightly larger cubes than in my other kebab recipes, so it doesn’t dry out on the grill but instead stays nice and juicy.
