Apricot Herb Couscous

A few years ago, on a trip to Morocco, I had a couscous similar to this but made with dried apricots. Since apricots are in the height of their season during summer, I like making it with fresh ones, but you could certainly use dried if you wish. This is a really speedy side dish to put together.

Ingredients

  • 1 (10-ounce/283-g) box couscous

Method

Cook the couscous according to the package instructions. Use a fork to fluff and fold in the parsley, apricots, almonds, oil, and lemon juice. Season with salt and pepper to taste and serve hot. A speedy side!
