I made this side dish once when I realized it was almost time to serve dinner to my guests and I’d forgotten to make any vegetables. I looked around the kitchen and saw that I had some extra squash and zucchini, so I quickly sliced it up, tossed it with a little oil, and sprinkled it with some seasoned bread crumbs and Parmesan. No one had any idea that it was a last-minute throw-together, and almost everyone had seconds.
