I like to make desserts that don’t take too much time and can basically just be assembled, especially if I’m already cooking a big meal. These apricot tarts are simple as can be. Plus, they look so sweet and adorable and they let the fruit really shine in the brilliance of its seasonality.

Ingredients

  • 1 sheet frozen puff pastry, thawed (I like Dufour pastry)
  • 2 tablespoons light brown sugar

Method

Preheat the oven to 400°F 205°C). Line a baking sheet with parchment paper.

Unfold the puff pastry on a work surface and press it with the palm of your hand to flatten it. Cut the sheet into six equal-size rectangles, about 3 by 4¾ <
