This dish was described by a lady whose mother had worked at Heveningham in Suffolk. I made it from her description and this is the recipe. It makes an interesting first course for an early-summer dinner party, and should be followed by a plain roast, preferably lamb. Frozen puff pastry, which is very good, can be used instead of home-made.
