Crispy Vegetable Spring Rolls

These crispy vegetable spring rolls are inspired by my daughter’s favorite appetizer at our local pan-Asian noodle shop. But I argue that this version is even better. These rolls are long and skinny and have a shatteringly crispy exterior. To make sure your spring rolls come out super crispy, look for 8-inch (20 cm) square frozen spring roll sheets, not the thicker, doughier egg roll wrappers, which bubble when cooked.

It is important to allow the filling to cool completely before f
