Yuca, also known as cassava, is a starchy tuber common in Latin and Caribbean cooking. Like potatoes, yuca makes outstanding fries with a crispy exterior and an exceptionally fluffy and starchy interior. When I began cooking with an air fryer, I wondered if it would produce yuca fries as good as the ones at my local Cuban restaurant. The answer is, it does, but there’s just one catch: you have to boil the yuca before you can fry it.
