Gulab jamun is a favorite dessert throughout India, where it is commonly served at festivals and family celebrations. Traditionally made from a dough of milk solids (known as khoya) lightly bound together with flour, gulab jamun are deep-fried and then soaked in a rose-scented sugar syrup. The result is a round, golden brown fritter that is meltingly tender and thoroughly saturated with syrup.

By making some slight modifications to the dough, it is possible to make soft, ligh
