Ingredients: 3 ounces (85 g) low-moisture whole-milk mozzarella cheese, thickly shredded; 3 ounces (85 g) low-moisture part-skim mozzarella cheese, thickly shredded; 1 link mild Italian sausage, casings removed; 1 Modern Artisan or Classic American Pizza Dough ball; 1 Modern Artisan or Classic American Pizza Dough ball; 5 ounces (149 ml) All-Purpose Pizza Sauce; 1 garlic clove, thinly sliced; 1 teaspoon dried oregano; 2 tablespoons (11 g) grated Pecorino Romano cheese; 1 small white onion, diced (about 1 to 2 tablespoons ([9 to 18 g]); 2 ounces (56 g) pepperoni, sliced (about 1 cup); 1 small poblano pepper, stem, seeds, and membrane removed, cut in half and diced (about 1 to 2 tablespoons [9 to 18 g])

This pizza is my take on the neighborhood pizzeria standard. A pizza supreme can vary from pizza joint to pizza joint, but I find it most often includes sausage, green peppers, onions, and (hopefully) pepperoni. I give it the Santa Barbara Baker treatment by upping the heat slightly by swapping mild and bitter green bell peppers for the more flavorful poblano pepper.
