Crunchy and sour pickled okra has just the right amount of zing to balance out spicy Southern dishes like the Cajun Chicken Sandwich (p. 29) or Cajun Bayou Dip (p. 97). Not only are they great straight out of the jar, but they’re hearty enough to skewer and grill as a crispy topping or be diced up for a coleslaw with some real punch.
