If you have any stuffing mixture left over, form into little balls and place onto the base of the roasting dish 20 minutes before the end of the cooking time. Or make extra stuffing and do this anyway.

Ingredients

  • 200 g lean pork mince or sausage meat
  • ½ medium onion, finely chopped
  • 1

Method

  1. In a large mixing bowl, combine all the ingredients, except the chicken, until well mixed.
  2. Using your hands, push the stuffing into the cavity of the chicken.
  3. Tie the legs together with string and roast according to the method for the basic roast chicken.
