Ingredients

  • 2 large aubergines, thinly sliced
  • 90 ml olive oil
  • 1 medium-sized brown onion, fin

Method

  1. Heat a large frying pan over medium to high heat and brush the aubergine slices with 30 ml of the olive oil. Cook the aubergines, in batches, for 2–3 minutes each side or until browned. Drain on kitchen paper.
