  • 250 g cake flour

Method

  1. Sift the flour and salt into a large bowl or into a stand mixer fitted with the blade attachment. Rub in the butter loosely or blend on pulse until you are still able to see bits of butter.
  2. Make a well in the centre of the flour and pour in about two-thirds of the cold water, mixing until you have a firm, rough dough. Add more water if needed.
