The one thing I have always had a problem with is the icing on a cake – it’s only on top! And when you get to the bottom of the slice, it’s dry. Enter the poke cake … such a clever idea and now every cake I bake I poke to ensure that each and every mouthful has enough icing. It’s also ideal for children’s parties.

Ingredients

  • 150 g butter, at room temperature
  • 300 g icing sugar, sifted
  • 5

Method

  1. Cream the butter until light and fluffy. Add the sifted icing sugar gradually until well combined.
  2. Add the vanilla and the chocolate-hazelnut spread and beat until smooth.
  3. Add the cream and beat again. Set aside.
  4. Using the handle of a wooden spoon, poke holes into the tray cake.
  5. Fill a piping bag with the icing and fill the holes.<
